Mixed daal chila /dosa / lentil crepe


Mixed daal / lentil crepe / chilla / dosa / is a delicious, crispy and healthy dosa variant that does not require fermentation. This recipe has only a few ingredients and is very simple to make. Serve with green, coconut chutney or peanut chutney to enjoy this protein packed breakfast or a meal.
It is a perfect diet food, it is also vegan and gluten-free. It has a perfect soft crispy texture.



Notes

1. Grind the batter with  minimum water.

2. The batter should not be very runny or thin.

3. Cook it on medium flame for crispier texture, higher flame will make soft dosas.

4. Soaking it for longer time will give a better texture.





Yield: 10 pieces.
Prep Time: 10 minutes
Soak Time: Overnight or 6 hours
Cook Time: 10 minutes

Ingredients
  • 1/4 cup Toor Dal ( Pigeon Peas ).

  • 1/4 cup Moong Dal ( Yellow Split Gram ).

  • 1/4 cup Chana Dal ( Split Pigeon Peas )

  • 1/2 cup Idly Rice ( Parboiled Rice,any small grain rice)

  • 3-4 Green Chillies ( adjust to taste )

  • 2 inch piece of ginger

  • 1-2 cloves of garlic ( optional )

  • 2 tsp salt or to taste

  • 1 tbsp cumin ( optional )

  • 1 tbsp coriander powder ( optional )

  • 1 tbsp red chilli powder

  • 2 tspn oil or ghee to apply while cooking

Procedure

1. Wash the Dal and rice thoroughly together


2. Soak the washed dal and rice for minimum 6 hours or overnight.



3. Drain the excess water, add green chillies, ginger along with the spices and salt. Grind everything to a medium coarse texture (not super fine)



4. Adjust water to make the batter of thick pouring consistency. ( Similar to regular dosa consistency )


5. Heat a dosa tava / pan.


7. On medium high flame, pour a ladle of batter and quickly spread it.



8. Lightly apply oil or ghee ( clarified butter ).



9. Once color changes to light brown, delicately scrape it.



10. Best served hot with green and coconut chutney or peanut chutney.
