Gluten Free Eggless Almond Oat Cookies

Gluten free, eggless almond oat, chocolate chip cookies. One of my favorite go to cookies. Easy, healthy, delicious, and super quick to make. In literally 20 minutes they can be served from scratch. I promise you are going to love these so much that you will be making a batch every few days! No fancy ingredients, no chilling - A very straightforward recipe that turns out perfect every single time.
You can develop many variations in flavor like cinnamon, raisins, cranberries with this basic recipe to jazz it up as you desire.  This is a soft crispy cookie with slight chew that is a great any time pick me up!








Notes

1.  You can also use instant oats instead of oat flour.

2. Skip the chocolate chips if you want.

3. The cookies are done in 15-17 minutes, but they will be soft to touch right after taking them out of the oven. They will become crispier as they cool down.

4. You can flavor these cookies with cinnamon and nutmeg for extra warm flavor.









Yield: 10-12 pieces
Prep Time: 10 minutes 
Cook Time: 15 minutes

Ingredients
  • 1/2 cup instant oat flour ( I grinded 1/2 cup instant oats into flour )

  • 1/2 cup blanched almond flour

  • 3 tbsp powdered sugar ( increase a little more if you want )

  • 3 tbsp room temperature softened butter ( not melted )

  • 1 tsp vanilla essence

  • 1/2 tsp baking powder

  • 1/4 cup semi-sweet chocolate chips ( you can adjust the quantity per taste )






Procedure

  1. Take almond flour, oat flour and baking powder in a bowl. Mix everything nicely.


2. In another bowl, take room temperature butter and powdered sugar.



3. Whisk them together until creamy. ( Use a hand mixer or a whisk )



4. Add vanilla essence.




 5. To this add the flour mixture and chocolate chips.





 6. Make a dough using spatula or hands.




7. Divide into balls and flatten. ( These cookies will not spread a lot, so make them into the size and shape you like ).




 

 8. Bake in a preheated oven at 350F / 180C for 15-17 minutes.





9. The cookies will be soft to touch when hot. They will crisp up as they cool to room temperature.


10. They stay fresh for a week in an airtight container at room temperature.

Can I replace butter with coconut oil?
Second to replace white sugar what can I use jaggery or date sugar

I hace tried these 3 times now. They are wondefdul. Thank you so much. The only changes I made was lessen the powdered sugar and butter to suit my taste.
I have also done a vaeiation where I added cocoa powder and ragi powder.
