- 4 medium sized boiled potatoes.
- 1 cup of oat flour ( or you can substitute with breadcrumbs/rice flour.... To make oatmeal flour, finely grind one cup of instant oats )
- 1 tsp of salt
- Oil for frying
- 2 tbsp of shredded coconut for the filling.
- For serving, tamarind and mint chutney.
1. Boil 4 medium sized potatoes.
2. Peel and grate the boiled potatoes.
( Tip..don't mash..it is important that you grate them which will insure they won't burst in oil)
3. Add 1 cup of oatmeal flour to the grated potatoes along with a tsp of salt.
4. Mix everything and make a dough. If the dough is sticky, add a little more oatmeal flour.
5. For the filling, take grated coconut. I added some finely chopped cashews, but this is optional.
6. Take a small amount of the dough. Shape it into a ball and press it down as shown.
7. Into this, add 1/2 tsp of coconut filling. Do not overfill it, otherwise it might burst while frying.
8. Push the filling down while raising the edges making it into a ball shape. ( Just as you would for a stuffed paratha. )
9. Fry it on high heat until golden and crispy.
10. To enjoy its crispiness, serve hot. Enjoyed best with mint and tamarind chutneys.
