Instant Khaman ( Gram Flour Steamed savory cake )


Khaman dhokla is a delicacy from western India to tickle your spicy, sweet and sour tastebuds.
Not only is very yummy and easy and quick to make, it is a healthy snack full of protein.
It can be eaten any time of the day.

Ingredients for batter
  • 1 cup Besan / gram flour
  • 1 tsp corn starch
  • 1/2 tsp citric acid or 1 tsp lemon juice ( increase or decrease sourness to taste )
  • 1 tsp salt
  • 1 tsp sugar
  • 3/4 cup water
  • 1 tsp Eno ( fruit salt ) 
  • pinch of turmeric
  • 1 tsp oil(any flavorless)
  • For sugar syrup 1-2tsp sugar, a pinch of salt and a pinch of citric acid dissolved in 1/2 cup water 
 Ingredients for tempering
  • 1 tbsp oil ( any )
  • 1 tsp mustard seed ( rai )
  • 1 tsp sesame seeds (  tilli )
  • 2 green chillies slit ( optional )
  • 4-5 curry leaves










Notes:

1. Make sure the batter is lump free and let the batter rest for 10-15 minutes before putting Eno.

2.  Adding corn starch gives the perfect texture to the khaman.

3. Steam on medium high and make sure to cool completely before unmolding. 



Procedure

1.  Sieve the dry ingredients into a mixing bowl.
( Besan/ chickpea flour, salt, sugar, corn starch, citric acid )





2. Add the water slowly and whisk to make a lump free batter.



3. Add a tsp of oil and pinch of turmeric. Whisk for about 5 minutes, cover and let it rest for 10 minutes before putting Eno.



4.  After 10 minutes add a tsp of Eno. Sprinkle some water on it and then mix everything together well till the batter turns frothy.


5. Transfer to a greased container and steam on medium high flame for 15 minutes.
(Do not overcook or it would become flat)



6. Take it out of the steamer and cool it completely for 10 - 15 minutes.


7. While the khaman cools, prepare the tempering.
Heat oil in a pan. When the oil is hot, add the mustard and sesame seeds. Then add curry leaves and slit green chillies.

8. Unmold and pour the sugar syrup evenly on khaman.




8. Pour the prepared tempering over the khaman.

9. Cut into pieces and garnish with chopped coriander and shredded coconut.

  


10. Serve with green and tamarind chutney or sauce.
