Aam Ka Achar / Mango Pickle

What Ketchup is to America, Mayo is to Canada, Salsa is to Mexico and Kimchee is to Korea, undoubtedly the Achar is to India. Achar and Chutneys are the two popular cousins who always find their place on Indian meal plate. Spicy and sour, this recipe of the Mango pickle is my variant of the
common condiment. It will surely tickle your tastebuds, so give this easy and hassle free recipe a try.

Prep Time: 20 minutes
Ingredients
  • 4 cups of chopped raw mangoes
  • 1/2 cup vegetable oil (you can switch it with mustard or any other)
  • 2 tbsp of Kashmiri red chilli powder
  • 2 tbsp fennel seeds/saunf
  • 1 tbsp of whole mustard seeds
  • 1/2 tbsp of fenugreek seeds/methi seeds
  • 5-6 tsp of salt


Procedure


1.In a bowl take 4 cups of chopped mangoes and keep it aside



2.In a grinding / spice jar add all the spices and salt





3.Grind all the spices and salt to a fine powder and add to the chopped raw mangoes



4. Mix everything together



5. Add 1/2 cup of room temperature oil and mix everything well. Keep stirring this once a day for about 3-4 days or till mangoes have softened.



6. After 3-4 days store in an air tight jar and refrigerate.
Pickle is ready to be enjoyed.
