Semolina Pockets / Sooji Pockets / Flatbread

Semolina Pockets / Sooji Pockets / Flatbread bring a fun change to your regular roti or paratha. These are crispy and flaky without using much oil or butter. These have a beautiful sour taste from the buttermilk which will remind you of Naan or Bhatura. These can be stuffed with your favorite filling or you can add spices of your choice to the dough to make it more flavorful. Go ahead and give this easy, healthy and yummy recipe a try.

Rest Time: 30 minutes
Cook Time: 10 minutes

Ingredients
  • 1 cup fine semolina ( sooji / rawa )
  •  About 1/2 cup buttermilk... if you want to make it vegan, use water instead 
  • 1 tsp salt
  • 2 tbsp oil ( to mix in the dough )
  • Some flour for dusting
  • 1-2 tbsp oil... for spreading on the roti to make layers(you can use butter or ghee too)



Procedure

1. In a bowl, take 1 cup fine sooji/semolina and salt.(if you have coarse sooji just grind it in a mixer grinder to make it fine...semolina flour will work too)



2. To this, gradually add buttermilk(as required) and make a soft dough....knead for 2-3 min,cover and let the dough rest for minimum 1 hour(the dough should not be stiff..it should be like a regular chapati dough/soft dough)





3. After 1 hour, add 2 tbsp of oil and knead the dough very well for about 5 minutes to make it smooth.(if it feels very sticky dust some regular flour when kneading...if it feels stiff/tight sprinkle some water and knead)



4. Make equal sized balls of the dough.


 
5. Take 1 dough ball and roll into a thin circle. Apply some oil and dust some flour(any flour) on it as shown below.



 6. Fold the flatbread / roti like an envelope as shown below.



 7. Put it on a flat pan / tawa on medium high flame, and cook from both sides like a regular paratha by applying some oil,ghee or butter.





8. Serve these hot crispy delicious flatbread garnished with some chilli flakes and fresh chopped coriander. Goes best with Chole, it reminded me of Bhatura, also goes great with any lentil soup ( dal ) or vegetable curry.
