Vegan Orange Almond Biscotti

 These are very flavorful biscottis with a perfect crunchy texture that perfectly go along with your favorite beverage.
Not only are they incredibly easy to make but they can be customized with your favorite flavors. I flavored them with oranges and cranberries and they turned out to be a great hit.





Notes

1. If you don't have almond flour,use all purpose flour (maida)in equal quantity or use cocoa powder or any flour of choice

2. I used almond milk to make it vegan you can use any milk.

3. If not using almond flour then add 1-2 tbsp more off oil or butter

4. Make sure to cool the cake completely after 1st bake for atleast 30 min, else it will start to crumble when you cut them.

5. Use a nice sharp knife for cutting.

Cook Time: 40 minutes

Ingredients
  • 1 cup all purpose flour

  • 1/2 cup almond flour

  • 1/2 cup powdered sugar

  • 1/2 tsp baking powder

  • 4 tbsp oil(any flavour less oil)

  • 2-3 tbsp almond milk or coconut milk or any milk of choice (I used almond milk)

  • 1 tbsp each of chopped almonds, dried cranberries and orange zest

  • 2 tsp of vanilla essence



Procedure
1.  In a bowl take all purpose flour, almond flour, powdered sugar and baking powder.



  2. Mix them together



 3. To this add orange zest, chopped almonds and dried cranberries




 4. Give it a mix



 5. Add oil, mix everything together with hands.(you will get a crumbly mixture)









 6. Make a  soft dough using  milk( the dough should not be too dry or too sticky)




 7. Make it into a flattened log shape or a desired shape. Transfer to a lined baking tray.




 8. Bake in a pre-heated 350F / 180C oven for 30-35 minutes for the first bake,or untill it  is firm to touch.This bake will cook the dough but it would be still soft to cut into.




 9. After the first bake, take them out of the oven and let it cool completely (its very important to cool them otherwise they will crumble while cutting). Then cut into 1 inch thick slices.



 10. Lay the slices on the baking sheet and again bake at 350F / 180F for 10 minute ( This is the second bake ) 





 11. After 10 minutes flip them over, and bake them for 10 more minutes. ( This is the third and final bake )




12.  Let them cool to room temperature and they are ready to served with coffee or wine or enjoy just like that.

Biscottis turned out great. They were perfectly sweet and crunchy. The best part of this recipe is that it uses almond flour.
This makes the biscottis healthy and delicious.
