Veggie Burger

Here is my take on the the veggie burger. This recipe is full of flavor and it is perfect for cooking on the grill, layering with your spreads and veggies or while eating, its not going to fall apart. It is so satisfying that even meat lovers are going to love it.
This variation is not made using beans so you do not have to worry about soaking or cooking the beans. Served on soft toasted semolina burger buns ( Click for Recipe of Semolina Burger buns. ) that are spread with a delicious yoghurt cilantro sauce, this burger delivers satisfaction in every bite. Crunchy, colorful vegetables finish off the assembly to make it a visual feast.

What makes this burger so perfect is that its so easy and quick to make with just a handful of ingredients, and its super healthy. You can customize it with vegetables and sauces of your choice.

Prep Time: 10 minutes
Cook Time: 15-20 minutes


Ingredients for the Patty
  • 1 medium sized carrot ( grated )
  • 1 medium - large potato ( peeled and grated )
  • 1/2 capsicum ( finely chopped )
  • 1 big onion ( sliced thinly )
  • About 3-4 tbsp chickpea flour / besan ( you can use oatmeal flour too )
  • About 2 tbsp rice flour
  • Salt to taste
  • Green chillies per taste
  • Grated ginger per taste
  • 1 tsp Red chilli powder ( optional )
  • 1 tsp Cumin powder ( optional )
  • 2-3 tbsp oil to pan fry or grill.

Ingredients for the Sauce
  • 1 cup hung curd ( thick yoghurt / greek yoghurt )
  • 1 handful of coriander leaves ( cilantro )
  • Salt to taste
  • 1-2 Green chillies ( optional )

Ingredients for Toppings

  • Few slices of tomatoes
  • Few slices of cucumber
  • Some lettuce leaves
  • Dry Garlic chutney ( optional )


Notes

1.  You can use vegetables of your choice for the patty or toppings. You can use sweet potatoes instead of regular potatoes.

2.  Instead of yoghurt based sauce, you can switch it with tomato sauce or any other sauce of your choice.

3.  You can use oatmeal flour instead of chickpea flour.

4.  I recommend using rice flour for a crispier crust.


Procedure

1.  Grate carrots and potatoes, squeeze out all the excess water using a muslin cloth.






2.  In a mixing bowl, take all the vegetables. ( The squeezed out and the chopped )



3.  Add all the spices and the flour to it, along with salt.






4. Give it a nice mix using your hands. The mixture will look a little dry, but thats ok, don't be tempted to add water.




5. Make patties using your hands and cook on medium flame for 10-15 minutes, flipping occasionally. Apply some oil while they are cooking for a crispier outer layer. 





6. Once the patties are almost done, grill or toast the burger buns too with some butter or oil.



7. To make the sauce, blend the ingredients together required for the sauce.
