Cinnamon Palmiers ( Puff Pastry Cookies )

 Known by various names Palmiers, Elephant Ears, French Hearts, or Palm Leaves, these sugar sprinkled cookies are light, airy and buttery. These are made using puff pastry, either homemade ( click here for my recipe for puff pastry) or store bought. These fancy looking cookies are very easy to make. I have used a touch of cinnamon for added flavor but even without it, they taste really great. The sugar gives it a nice crunch, and the flaky buttery layers just melt in your mouth. These flaky and sweet cookies are sure to become your favorite treat.

Ingredients

 









 Procedure

1.  Pre-heat the oven at 400 F / 200 C.

 

2. Mix sugar and cinnamon in a bowl.



 3. Roll the pastry sheet into about 8" x 10" ( about 1/4" thick )

 


4. Spread half of the sugar and cinnamon mixture on your work surface and place the rolled puff pastry sheet on top of the cinnamon-sugar mixture.



5. Sprinkle the remaining sugar-cinnamon mixture on top.


 

 6. With the help of a rolling pin, press the cinnamon-sugar into the dough.

 


7. Roll the puff pastry from the longer sides till they meet in the middle and refrigerate for about 30 minutes.



8. After 30 minutes of refrigerate, cut into 1/2 inch pieces and bake in a prelined baking sheet for 12-15 minutes or until golden at 400 F/200 C. ( Flip them half way through ).





9. Let them cool down, and enjoy. Store them in an airtight container.
