Gluten-Free Fudgy Chocolate Bars

These melt-in-your-mouth gluten free chocolate fudge bars are super simple to make with hardly 10 minutes of prep time...after that just pop them in the refrigerator to let them set and enjoy.
You can do many variations with this recipe...from changing shape to playing around with flavors.
These were a big hit in my family. These can be made with many variations too.

 

 

Yield: 6-7 large pcs
Prep Time: 10 minutes
Set Time: 3-4 hours.


Ingredients
  • 1 cup heavy cream ( I used plant based but you can use any like coconut, regular heavy whipping cream )
  • 1 cup dark chocolate chips
  • 1 1/2 cups blanched almond meal
  • 1/2 cup dried coconut
  • 1 tsp Vanilla essence 

 

 

 

Notes

  1. To make it vegan you can use coconut cream
  2. Instead of almond meal you can use cashew powder too
  3. If desired you can make them into different shapes..
  4. Many flavrings like orange zest or lavender would go very well with chocolate.
  5. Add chopped nuts for more crunch
  6. If not making it gluten free add crushed cookies or Graham crackers or digestive biscuits for more texture.

 

Procedure

1. In a pan heat the cream, no need for boiling.




2. Once the cream is hot, turn off the flame, add dark chocolate chips.
 


3. Whisk it together till you get a nice glossy liquid


4. Let this mixture cool for about 2 min.
 
 
5. Add almond meal and coconut to it. Mix well.




6. Pour this mixture in a loaf pan lined with parchment paper or aluminum foil.
    Refrigerate for 3-4 hours



7. After refrigerating it for 3-4 hours, take it out, cut and sprinkle some almond meal or desiccate coconut for garnish if desired.




8. Melt in your mouth amazingly delicious fudgy bars are ready to enjoy! Keep them refrigerated.

Could you let me know for how many hrs should I refrigerate it if I want to mould them into shapes?
Also what is the shelf life once it is made?

Hi Nandita!!Glad you liked the recipe

1.Refrigerate for minimum 2 hours before moulding into desired shapes.
2.if you plan to make small shapes..you might have to refrigerate in-between too, because it has choclate..it would become a bit sticky with warmth from hands.
3.always keep them in the fridge...they will eaisly last for 2-3 weeks.. depending on the expiry date of your cream 😊
