Pav Bhaji

Bhaji is a flavorful blend of mashed vegetables along with spices and topped with lemon, cilantro and chopped onions. Accompanied with buttery soft pav/dinner rolls ( click <HERE> for recipe for Pav bread ), the dish is called pav-bhaji which is one of the most iconic and popular street foods of Mumbai, enjoyed all over India.

I have always been a huge fan of the spicy and flavorful bhaji with the buttery toasted Pav. Not only is it fulfilling but amazingly delicious too!!!

It can easily be made vegan by replacing regular butter with vegan butter.
You can prepare it in advance in larger amounts, the flavors get only better with slow long simmering, making it a popular choice in a party menu.

Notes

1. Adding beet root juice is optional, you can use food color if desired.

2. Add vegetables of your choice.

3. Adding kasuri methi gives a great taste, so I would recommend.

4. Add tomato along with other vegetables in the pressure cooker.

Ingredients


Dinner Rolls or Pav Buns ( For my amazing homemade eggless Pav recipe click <HERE> )

Vegetables
  • 3 medium tomatoes

  • 2 medium potatoes

  • 1 medium to large carrot

  • 1 cup of chopped cauliflower

  • 1/2 cup peas(frozen or fresh)

  • 1 capsicum(finely chopped)

  • 1 medium onion (finely chopped)

  • 1 tbsp of fresh garlic paste

Spices 
  • 3 tbsp of pav bhaji masala ( blend of spices )

  • 2 tsp of Kashmir red chilli powder

  • 1tsp kasuri methi ( dried fenugreek leaves )

  • Salt per taste

  • Chopped cilantro ( coriander )

  • Beetroot juice for color ( optional )

  • Juice of half a lemon











 Procedure

1. Chop all the vegetables in big chunks including tomatoes. Add salt, 1 tsp of pav-bhaji masala, 2 cups of water ( enough to soak the vegetables ).
Cook everything for 3-4 whistle in a pressure cooker ( or instantpot )




2. In a wide pan take 2 tbsp of butter. Add garlic, capsicum and onion cook them well.




3. Once the onion and capsicum are cooked, add red chilli powder, kasuri methi, pav bhaji masala, salt along with a few chopped green chillies ( optional ) . Give it a mix and let cook for about 5 minutes on medium flame.




4. Once the vegetables are cooked, mash them nicely.



5. Add mashed vegetables to the prepared masala in the pan. Mash everything nicely (add the beetroot juice or food color if you prefer at this point)



6. Let the bhaji simmer for 5 min.



7. Finally add cilantro, lemon juice and serve hot with buttery Pav or dinner rolls. For homemade Pav recipe click <HERE>
