Eggless No-Churn Mango Ice Cream

As the summer is approaching, what could be better then homemade ice cream, without the hassle of churning or using an ice-cream machine.
All you need is your favorite fruit, condensed milk and cream to make this delicious ice cream which is creamy, light and scoopable and the best thing is you can adjust the sweetness and flavors to your liking.

The taste of fresh ripe mangoes is truly incomparable. Elevate your ice-cream game by using this delicious fruit for an exceptional flavor. Choose the most flavorful and aromatic, sweet and slightly tart mango variety you can find.

With no eggs, artificial flavors, colors or additives, this is so much better then any store brought ice-cream, so go ahead and indulge!

 


Notes

1. Make sure you cover the mould / tin which you are using to set your ice-cream to avoid ice crystals from forming.

2. You can replace the mango with any other fruit or flavor.

3. Do not over whip the heavy cream, whip only till you see soft peaks.

4. Use popsicle moulds if you would rather enjoy the ice-cream on a stick.

5. To make it vegan, simply blend 1 big chopped and peeled mango, 1 cup full fat coconut milk along with its cream, and maple syrup for sweetness and freeze.






Ingredients

  • 3/4-1 cup mango puree ( About 1 big ripe mango blended / use store bought )

  • 1/2 cup sweetened condensed milk

  • 1 cup chilled heavy whipping cream

  • 1/4 tsp saffron strands ( optional )

  • 1/4 tsp cardamom powder ( optional )

 



Procedure

1.  In a bowl, take about 3/4 cup -  1 cup of mango puree ( I blended 1 big mango for the puree ).



2. Add 1/2 cup of sweetened condensed milk to it. Whisk it very well.




3. In another bowl, take 1 cup of heavy whipping cream, whisk till you see soft peaks.





4. Now, gradually add the mango puree + condensed milk mixture into the whipped cream. You can add some saffron and cardamom also. Add finely chopped mango pieces for extra texture if desired.




5. Pour into desired mould or tin for 6-8 hours. ( Make sure to cover the tin or mould very well )

If you taste ice crystals after the ice cream is set, whisk it again until it is creamy. Cover and set again.




6. This delicious and easy to make ice-cream is ready to be enjoyed 😃

What can be used instead of whipped cream? Can you suggest a combination of milk with something else to replace whipped cream?

Hi!! You can use half and half instead of cream or reduce the milk a little and add about 1/2 tsp of corn starch to thicken it up and use...☺️🥰

You can any type of cream,it doesn't have to be whipping cream.
