Gluten-Free Eggless Almond Cookies

I have always loved cookies, whether they are chewy or soft or chocolatey or any other variant. But these almond cookies have everything I would want in a cookie. They are light, delicate, and melt-in-your-mouth with a wonderful note of almond, that you are going to love.

These have a light sweet flavor which feels perfect! They have been made and tried many many times and still remain the true favorite cookie in the family. You really have to try them to know how amazing they are.

You will be surprised how buttery and moist they taste without the addition of a lot of butter.

Presenting a very easy recipe for these beauties. Just follow the steps and notes and you will be amazed with the results.

1. Do not use melted butter for this recipe. Room temperature softened butter is recommended or softened coconut oil if going for a vegan option.

2. Do not add any extra liquid to bind the dough, it will come together!

3. If the dough feels loose / too sticky just add some almond flour

4. After baking and cooling if the cookies are not crisp enough just bake for few more minutes

5. Adding citrus zest gives an amazing flavor to these cookies.

6. Pipe some melted chocolate on top for extra richness or drizzle with some sugar glaze.

1 US cup =240 ml


  • 1 cup superfine blanched almond flour

  • 3 tbsp powdered sugar

  • 3 tbsp room temperature softened butter / vegan butter / coconut oil

  • 1/2 tsp baking powder

  • 1 tsp vanilla essence

  • Zest of 1 lime/lemon ( optional )

  • A small pinch of salt ( optional )


1. In a bowl mix almond flour, sugar, and baking powder very well. Optionally add a small pinch of salt too.

2. In another bowl whisk butter and vanilla essence till light and creamy. ( Also add lime zest here if adding / other flavors if desired)

3. Add dry ingredients into wet and make a dough using a spatula. The dough will come together, do not be tempted to add liquid.

4.  Place the dough on a parchment paper. Place another piece of parchment paper on top of the dough and roll into about 1/4 inch thickness. Cut into desired shapes using a cookie cutter (or just divide into balls and flatten them).

I have made both circle shaped and flower shaped and have topped one with almonds.

5. Bake at 350 F / 180 C for 15-18 min. till the edges start to brown.

6. Let the cookies cool for about 30-40 minutes before serving so they can crisp up properly.

Hi ,the cookies look delightful, but what is blanched almond flour & how can we make it at home ?

Hi!! Thank you so much 🥰... blanched almond flour is made with almonds that are soaked and have their skins removed!! To make it at home you will have to soak the almonds,remove their skin and using the pulse motion of your grinder..grind into fine powder!!!
