Cashew Kulfi Ice-cream ( Vegan )

Kulfi - It is a popular and traditional Indian frozen dessert that is similar to ice-cream but creamier and denser because it is not whipped. Usually it is made by boiling milk over low flame till thickened and flavored with nuts.
Here,I am presenting a healthier versatile recipe of this amazing dessert which is dairy and sugar free!!

The good thing is, even on very hot summer days  you can enjoy the cool goodness thoroughly... because it's denser so takes much longer to melt!!

Easy, delicious and quick to make. No hassle of cooking and reducing the milk: simply soak, grind and freeze.

Healthy doesn't have to be boring!!

Notes

1 You can customize as per your choice. I used cardamom and saffron. You can use flavors like rose, vanilla, chocolate or any fruit too.

2. If not making it vegan you can use any dairy milk or cream

3. Increase the sweetness per choice

4. If maple syrup is not available, you can use sugar substitute or sugar.

5. If you do not have moulds, use disposable plastic cups or even paper cups.




1 US cup = 240 ml

Ingredients

  • 1 cup raw cashews

  • 3/4 cup full fat coconut milk ( or any other milk )

  • 1/4 cup maple syrup ( use sugar if you want)

  • 1/4 tsp cardamom powder (optional)

  • Few strands of saffron dissolved in coconut milk

Procedure


1. Soak the raw cashews in room temperature water overnight or for minimum 4 hours



2. Rinse the soaked cashews and place in a blender along with coconut milk, maple syrup, cardamon powder and saffron strands.



3. Blend into smooth paste and pour into desired moulds.



4. Cover with cling foil and freeze overnight or till set



5. Kulfis are ready to be enjoyed. Garnish with saffron and pistachios. If you want, you can also drizzle a few drops of rose syrup.
