Blueberry Compote ( Vegan, Gluten Free )

Easy berry compote that requires just one pot and less than 30 minutes. Goes great with waffles, cakes, parfaits, cheesecakes, pancakes and many many more. Its perfect with kids and adults alike. With so many ways to enjoy, it is definitely going to become your fridge staple.

Naturally gluten-free and vegan, this berry compote uses less amount of sweetener compared to jams which makes it a healthier option to enjoy in place of it.

We love seasonal fruit, but usually pick way too much and have lots of leftovers. A berry compote is a great way to use up all your favorite summer fruit, specially the ones that are just a touch over ripe or underused!

This versatile recipe can be made with fresh or frozen berries. You can use any berries that you have available. You could use a mix of berries too!



 

Notes


1. Increase the amount of sweetness if desired.

2. You can use mixed berries too.

3. Instead of adding lemon juice and water you can add 2 tbsp of orange juice.

4. Cinnamon stick or other spices can be added for more flavor.

5. This compote goes so well with pancakes, parfait,cakes, cupcakes, bread ...etc



Ingredients

  •  2 cups of fresh blueberries ( combination of berries/any berry )

  •  2-3 tbsp of any sweetener of choice ( maple syrup, honey, brown sugar or cane sugar )

  •  1 tbsp water

  •  1 tbsp lemon juice

  •  1-2 tsp vanilla essence ( optional )




Procedure

1. Place blueberries in a pan. Add lemon juice, water and sweetener ( sugar or alternate ).

Turn on the flame to medium - high.




2. Boil the mixture.




3. Once it starts boiling, reduce the flame and simmer for about 10 min, till the mixture is slightly thick. ( It will thicken up as it cools. )
Stir once in a while.



4. Once done, let it cool completely. It's ready to be enjoyed!




5. It stays good in the refrigerator for 1 week-2
