Shortcake / Buttermilk Biscuits / Puff Bread

Popular in United States as Biscuit, this flaky pastry is a very soft and crumbly quick bread. These are light and fluffy and are simply delicious. Very easy to make and can be enjoyed with jam, jellies, gravy or just like that. The recipe includes videos and tips to make sure you end up with perfect biscuits every time.







Yield: 6-8 pcs
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients
  • 2 cups of all purpose flour / Maida ( you can replace with whole wheat flour or other gluten free flour )
  • 1/2 cup cold unsalted butter stick ( or replace with dairy free butter to make vegan )
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1 cup buttermilk (  If you don't have buttermilk just mix1/2 cup yoghurt + 1/2 cup water whisked together)






 Procedure

1.  In a bowl, take flour, salt sugar and baking powder.





2. Mix everything together.



3. Into this, grate 1/2 cup of cold butterstick. This recipe requires cold butter ( not room temperature )




5. Mix gently with fingers. ( see video )





6. Make a hole in the middle, and add 1 cup of buttermilk




7. Mix using a spatula to make a crumbly dough. Do not use hands to make the dough because we do not want to melt the butter. (Kneading is not required in making biscuits....its all about pat and fold...pat and fold)




8. Place this dough on a well dusted surface.



9. Pat and bring the dough together.


10. Start folding ( see video ). Repeat this process for 4 to 5 times to create the layers.






11. Cut using cookie cutter.



12. Place it on a baking sheet and brush the top with butter and bake in a preheated oven at 400-420F for 20 minutes.

 


13.  After 20 minutes the biscuits are ready to be enjoyed hot or cold. My favorite is with whipped cream and fresh fruits. You can enjoy it with jam or gravy or just like that. It tastes very yum.




Store them in an airtight container.
They stay good for 2-3 days at room temperature.
If storing in refrigerator..... microwave for few seconds before eating...to get that perfect buttery flaky taste.
