Eggless Whole Wheat Banana Bread

There are a lot of banana bread recipes out there. Wouldn't you like to have a recipe that you can keep coming back to ?
This recipe delivers just that, and more. It has a moist and tender crumb, and slices cleanly. It is soft and cooks evenly with guaranteed no dense soggy bottoms.
Its aroma will lure family members ( and neighbors 😉 ) into your kitchen as it bakes.

And to top it all off, this recipe is eggless and made with whole wheat flour!

It has the perfectly balanced amount of banana flavor, and spiced with the classics: vanilla, cinnamon and nutmeg. These are indeed the most balanced, and most loved flavors by all. Have a slice with your coffee, as a to-go breakfast for your little one or any time you need a sweet pick-me-up without feeling guilty!

You simply cannot go wrong with this recipe, So lets get started!





Notes

1. You can use all purpose flour instead of whole wheat

2. Adding nuts is optional but gives a great texture

3. The batter is supposed to be a little thick compared to a cake batter

4. Quantity of sugar can be adjusted to taste.

5. Intead of sugar you can use brown sugar, maple syrup or other sweeetener of choice




1 US Cup = 240 ML

I have used a 7 inch loaf pan.

Ingredients

  • 1.5 cups whole wheat flour

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon powder

  • 1/4 tsp nutmeg powder

  • 1/2 cup or more chopped nuts of choice ( I used cashews )



Wet ingredients

  • 2 very ripe bananas

  • 1/2 cup oil

  • 1/4 cup sugar

  • 1/4 milk ( any - oat, almond, soy )

  • 2 tsp vanilla essence

  • 1 tbsp vinegar



Procedure

1. Sift all the dry ingredients




2. In a blender add all the wet ingredients, blend till smooth and creamy




3. Pour the blended wet ingredients into a bowl




4. Mix dry ingredients into wet and make a lump free batter. Batter is going to be slightly thick.



5. Finally add the chopped nuts and mix.



6. Pour in a lined pan and bake at 350 F  / 180 C  for 35-40 min or till toothpick comes out clear. Mine was done in about 40 minutes.


You can add some chopped nuts on top before baking ( optional )






7. Let it cool completely before slicing and serving.
