Rainbow Banana Bread

Life is more fun with color. My family loves banana bread, this time I got a little inspired with all the summer colors in the garden, and made it colorful. This is a moist flavorful and super soft banana bread recipe. It is a great way of using bananas that have slipped a bit past their prime, the flavor of sweet ripe bananas really comes through in your mouth. Easy to make, no need for a stand mixer the bread is deliciously moist and has a tender crumb. The colors will be big hit with the kids!







Notes
  1. Banana bread requires super ripe bananas, the ones that have brown spots on the peel.
  2. You can avoid adding colors, or use natural colors
  3. You can use equal quantity of buttermilk instead of milk and vinegar mixture.
  4. You can make it vegan by using water instead of milk, but make sure to add vinegar.
  5. Adding of spices is optional but I would recommend as it gives a nice flavor.
  6. You can use only whole wheat flour or only all purpose flour.
  7.  Using only whole wheat flour would result in a denser bread.
  8. You can add sprinkles to add more jazz.
  9. You can also add sunflower seeds.



Yield: 7 x 3  loaf pan
Prep Time: 10 minutes
Cook Time: 40-45 minutes at 350 F ( 180 C )


Dry Ingredients for the cake

  • 3-4 ripe bananas
  • 1/2 cup sugar / brown sugar
  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour ( maida )
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon powder ( optional )
  • 1/2 tsp nutmeg powder ( optional )
  • 1/4 to 1/2 cup chopped walnuts

Wet Ingredients for the cake

  • 1/2 cup oil ( any flavorless )
  • 1/2 cup room temperature milk mixed with 2 tsp of vinegar
  • 2 tsp vanilla essence



Procedure


1.  Mix 2 tsp vinegar in 1/2 cup of room temperature milk. Keep aside. ( The milk should curdle as shown )




2. Mash the ripe bananas nicely.



3. Add sugar and oil to the mashed bananas and mix well.






4. To this, add the milk along with the spices ( vanilla essence, cinnamon and nutmeg ) and mix very well.





5. Sieve all the dry ingredients in a bowl.



6. Gradually add the dry ingredients into wet ingredients and make a lump free batter using cut and fold method.


7. Divide the batter into 4 equal parts, if making it colorful, else just pour into a prelined loaf pan.



8. Add desired colors and mix well.




9. Add dollops of the prepared batter alternately to your lined loaf pan. Bake at preheated 350F ( 180C )  oven for 40-45 minutes, or until the toothpick comes out clean.






10. After being baked, let the bread come to room temperature and cut into 1/2" slices.
