Instant Mawa Peda / Milk Fudge

Sweets or Mithai are a significant element in Indian cuisine and culture. These are made as offerings during festivals or shared for celebrations. Peda is made in many variations, primarily consisting of Milk and sugar and flavored with cardamom and saffron. Traditionally it is a time consuming process, in which milk is gradually reduced over a flame to a thick dough ( Khoya ).

In this recipe, you will need just 15 minutes to produce melt-in-your-mouth Pedas. These are smooth, rich and flavorful with just the right amount of sweetness.

I have used a mould to make these in beautiful designs. You can make flattened balls and create designs using a fork / knife or toothpick. These can be topped with pistachios or nuts of choice.



Notes

1. If making just Mawa, skip adding the sugar and flavorings.

2. You can also add some almond flour to make almond Peda.

3. Add any flavoring of choice to give a unique twist to your creation.

4. Make Pedas while the mixture is still warm.




Ingredients

  • 2 cups milk powder (unsweetened)

  • 1 cup milk (full fat)

  • 1 tbsp ghee

  • 1/4 cup sugar ( reduce to 3 tbsp if preferred)

  • Cardamom powder ( optional )

  • Few saffron strands ( optional )





Procedure

1. In a heavy bottom pan take milk add milk powder, and ghee. Combine everything well. Make sure there are no lumps.







2. Start cooking the mixture on a medium flame.Keep stirring!




3. When it becomes slightly thick, add sugar, cardamom powder, saffron strands, and continue cooking while stirring.




4. Turn off the flame when the mixture looks like a soft dough. ( It will thicken as it cools)






5. Make Pedas while the mixture is still warm(rub the mixture in between your palms while making the Pedas to get a smooth consistency.
