Rose Mishti / Pranhara Bengali Sweet

Pranhara ( Literally meaning worth losing your life over ) is a delicious simple and delicately sweetened, cottage cheese based Bengali sweet.

It is classically styled and softly textured but with a truly luxurious mouth feel.  As you take a bite, the richness of the dessert is instantly apparent.
Pranhara is pure in taste and appearance, totally justifying its name.

Making the sweet does not require many ingredients, and does not take too long either. This is an easy recipe that is surely going to make any occasion a celebration. So lets get started!




Notes

  • I have made it with and without rose syrup. It tastes delicious either way!

  • You can use more milk if you want to make more in one go. Follow the procedure and adjust the sugar according to the ratio in the recipe.

  • Always cook the paneer on medium low flame

  • Don't wash the chenna with too much water, 1-2 cups is enough





Ingredients
  • 2 litres / 9 cups of milk

  • 3 tbsp of vinegar mixed with 3 tbsp of water

  • 2 tbsp sugar

  • 1 tsp rose water (optional)

  • 1 tbsp rose syrup

  • 3-4tbsp of  sweetened condensed milk

  • 2 tbsp of milk powder for rolling

Procedure

1. Take milk in a heavy bottom pan and bring it to a boil



2. When milk starts to boil turn off the flame and gradually add vinegar water mixture till milk curdles or the cheese separates




3. Pour this mixture in a muslin cloth...pour 1-2 cups of cold water to remove the acidic taste of vinegar



4. Squeeze out the access water from the chenna/paneer/cheese



5. Crumble and divide the prepared chenna into two equal parts



6. Take 1 part of chenna, add 2 tbsp of sugar and knead well for about 5 min or until chenna is nice and smooth



7. Add  this chenna along with sweetened condensed milk and rose water(optional) to a heavy bottom pan and cook for about 5 min on a medium flame.



8. Let the mixture cool to room temperature.



9. Combine both the chennas (cooked and not cooked) add rose syrup.



10. Knead well for 5 min or till well combined.



11. Divide this dough into equal parts and roll into balls.


12. Roll the prepared balls in milk powder and garnish with chopped almonds and pistachios
