Chocolate Oat Cookies ( Eggless, Gluten-Free )


Isn't everything better with chocolate ? Here is my version of yummy chocolate cookies which are gluten-free, eggless, and a good source of protein and fiber too !!
Easy, healthy, delicious, and super quick to make. In literally 20 minutes they can be served from scratch.
No fancy ingredients, no chilling - A very straightforward recipe that turns out perfect every single time.

This is a soft crispy cookie with a light airy texture which is a great any time pick me up!
These can easily be made vegan and would taste as delicious.

Notes


1. You can also use instant oats instead of oat flour.

2. Skip the chocolate chips if you want.

3. The cookies are done in 15-17 minutes, but they will be soft to touch right after taking them out of the oven. They will become crispier as they cool down.

4. To make these cookies vegan, use room temperature coconut oil or vegan butter.



Ingredients

  • 1/2 cup oat flour ( grind regular oats if you don't have flour)

  • 1/2 almond flour

  • 1 tbsp unsweetened Coco powder

  • 1/2 tsp baking powder

  • 1/4 cup powdered sugar

  • 1 tsp vanilla essence

  • 3 tbsp room temperature softened butter / room temperature coconut oil /vegan butter

  • 1 tbsp milk ( any )
  • 1/4 cup chocolate chips (optional)




Procedure


1. Take almond flour, oat flour, cocoa powder and baking powder in a bowl. Mix everything nicely.



2. In another bowl, take room temperature butter, powdered sugar, vanilla essence and 1 tbsp of milk. Whisk them together until creamy.




3. To this add the flour mixture and chocolate chips.




4. Using a spatula, fold everything together to make a dough. Do not be tempted to add more liquid as it is going to come together.



5. Divide into balls and flatten. ( These cookies will not spread a lot, so make them into the size and shape you like ).

Bake in a preheated oven at 350F / 180C for 15-17 minutes.




6. After 15 minutes, the cookies are out of the oven. They will be soft to touch when hot and will crisp up as they cool to room temperature.

They stay fresh for a week in an airtight container at room temperature.
